Dan Rinaldi's Shrimp Scampi con Chile di Calabria

From television to his home kitchen, Rhode Island PBS had the opportunity to see Providence firefighter and The Great American Recipe contestant Dan Rinaldi show off his cooking chops up close. Passionate about Italian cooking, Dan shared his recipe (see below) for one of his favorite dishes - Shrimp Scampi con Chile di Calabria. Considered Dan's personal take on classic shrimp scampi, the dish features heirloom Calabrian chilis right from his garden, ground into a fine, flavorful powder.

Competing to win the national search for "The Great American Recipe," contestants in this new cooking competition showcase their signature dishes and share heartwarming stories about their familial origins.

Dan Rinaldi's Shrimp Scampi con Chile di Calabria

Ingredients:

  • 1 tablespoon of salted butter
  • ½ cup olive oil
  • 10 cloves of garlic (sliced thin)
  • 8 dried Calabrian chiles (stems removed)
  • 1-1/2 pounds 13-18 peeled and deveined gulf shrimp
  • ½ teaspoon kosher salt
  • ½ teaspoon fresh cracked pepper
  • ½ cup Pinot Grigio white wine
  • 8 ounces linguini fini
  • 2 tablespoons fresh chopped Italian flat leaf parsley (divided)


Directions:

Put butter, olive oil, and garlic in a 12-inch frying pan over low heat and cook until garlic is almost browned. While garlic is cooking, put chiles in a spice grinder and grind until fine, set aside. Once the garlic is almost toasted, add ground chiles to the pan on cook for 30 seconds. 

To the pan, add shrimp, salt, and pepper, and cook shrimp until almost done, flipping halfway through. Remove from the pan and set aside. Add wine to the pan and reduce by half. While the wine is reducing, cook the pasta one minute less than the box directions. 

Once pasta is done, add to the frying pan along with the shrimp and one tablespoon of parsley. 

Cook until shrimp is fully cooked. Put contents of the pan on a serving platter and garnish with the remaining tablespoon of parsley.
